The title should really say my first yummy impromptu dinner. Ha! :) We were leaving to go to Europe for two weeks and it was "slim pick-ins" (my mom used to say that) around our house. I had red potatoes, eggs, and bread - classic breakfast for dinner it was.
I know it doesn't look that pretty and looks fairly simple, but I was definitely proud of myself. Hence why you are receiving a blog post about scrambled eggs, toast, and hash browns. Let's just say that the last time I made homemade hash browns things didn't turn out so good.
Eggs: 6 free range brown eggs, pepper jack cheese
Red Potatoes: Vegetable Oil, sweet onion, salt and pepper, Mrs. Dash Original Blend (and probably some other things that I have forgotten, I think I just threw random seasoning in which is why I was surprised?)
Toasted Wheat Bread with butter
Just ask my husband about what happens when I cook.... :)

Should be vs. Reality
Right now I can rattle off a list of things that I should be doing...
1. Unpacking boxes from when we moved in September that are still piled in the office.
2. Make the office a usable space
3. Clean the microwave since I forgot to do that while cleaning kitchen yesterday
4. Vacuum Bella hair that has fallen off since vacuuming at 3:00 yesterday.
5. Make self lunch
6. Hang picture frames
7. Plan menu for next week
And it could keep going.
Instead, I amprocrastinating looking at inspiration for the office....

Construction Equipment Lesson
Last night I had the privilege of spending a couple of hours with one CUTE little two year old, named Rhodes. We played race cars, had a tickle fest, ate dinner, watched Cars (all little boys love this movie), read a couple of books, but best of all.... Rhodes gave me a lesson on all things construction related. I am obviously out of practice on little boy lingo, but no worries, that didn't hinder Rhodes at all! :)

What we were up to this weekend...
We had a fun filled weekend that didn't seem very productive at first, but in hindsight was pretty productive! Friday night we planned to hit up Studio Movie Grill with one of our couple friends, Steph and Chris, to see Super 8, but apparently SMG is the place to be on Friday night. We arrived 5 minutes after our friends had bought tix and 20 minutes early to find that the movie was sold out. Bummer. So we had our favorite pizza instead.
I was super excited to go, it was my first time to visit the farmer's market. We found some great impatiens for the front yard and yummy smelling and tasting fruit for our bellies. It was too bad that I had gone to the grocery store during the week. We could have stocked up on some great locally grown fruits, veggies, and meats too! We decided that visiting the farmer's market might have to become part of our Saturday morning routine. Though we will have to wake up earlier than 11:00am.....
Jorge and Marianna joined us Saturday night for dinner and wine. We had a blast hearing about their recent nuptials and honeymoon. I only managed to capture this picture of our salad, but we had grilled chicken, broccoli with cheese, and mashed potatoes with a yummy merlot.
After dinner, we sat under the patio for a while enjoying the summer breeze. Nate and I know we are getting older, by 10:30 we were both yawning. Pretty pitiful.
Sunday we went to church and heard this great message, Being Led at Work, by JP then hit the yard for that work we didn't do on Saturday. Thanks to my sweet Bella dog, I spent most of the afternoon repotting my hanging plants in Bella proof pots. Here are a few before and after shots. I think it looks much better after - so maybe I should be thanking Bella? Hmmm, don't think so.
Then I headed to the front yard.....

Saturday, we planned to do a lot of work on the yard and possibly clean up the garage, but after having our morning Einstein's coffee our plans changed. The lovely flowers that we planted in our front yard a month or so ago were dying and needed to be replaced. Luckily for us, our neighbors just had their front yard landscaped which gave us a great idea - to copy them! :) We headed to the Dallas Farmer's Market with our newly married friends Jorge and Marianna to pick up some flowers and see what else we could find.

Anyone that knows me, knows that I do not have a green thumb. I'm pretty sure I have failed at trying to keep any plant I have ever had alive. Front yard flowers = case in point. Here's to hoping this time I don't fail!!! Husband, can you help with this? Hehe!

Bella Bombs: It's my birthday!!
This birthday thing is pretty cool. At first, I didn't know what my crazy parents were talking about this morning when they woke up singing this song and excitedly saying, "Happy Birthday, Bella!!!" Sometimes my parents do odd things, so I usually just try to go with it.
It ended up being okay after she showed me how to wear it.
Then I got a present!!! I really like gifts - especially when it involves a bone and swimming!!
I got to spend this thing called "a birthday" hanging out in the backyard, chasing the sprinkler, playing in my pool, and chewing on my new bone. My parents rock. When do I get one of these again?
